Nicole Lessmann Rogers and her husband Sam Rogers, both former intelligence collectors/analysts in the Army,now living near Houston, Texas.
“Our lifestyle is pretty hectic of late, and finding time to prep clean, healthy meals during the week is a challenge,” Nicole says. “I would love some simple, healthy recipes that we can eat throughout the week.”
While Nicole and Sam are no longer in the Army, they still juggle the demands of full-time work (Nicole for Homeland Security as an enforcement and removal assistant, and Sam as a project engineer for a construction-services company) with eating healthily. “If I don’t do most of my meal prep on Sundays, eating healthy mealsgoes out the window during the week,” says Nicole, who also keeps up an active CrossFit and running routine. And since Sam frequently travels for work, it’s often hard to know who will—or won’t—be home for dinner.
